Mexican Hunter's Chicken Breasts

Chances are, if you're coming to my house for dinner, it will be a one pot meal....
I'm a firm believer in as few pots as possible...and chances are it will be called 'Hunter's ....something'
 ...hahaha...
Tonight it was Mexican Hunter's Chicken Breasts. Tomatoes, red peppers, garlic, mushrooms, onion and chicken breasts with a sprinkle of lemon pepper and ginger and a dab of olive oil to brown the chicken a bit....
oh...the story about the Hunter's...I come from a German background...Hunter in German is Jaeger...like Jaeger Schnitzel...yummm...in my early days, every Monday I would make Jaeger Stew...Hunter's Stew...yup....I would hunt through the fridge for any leftovers and it would be in the pot...
I try not to waste anything if possible...be creative...let your inner chef boy r dee shine through...we waste way too much food in America.

Things to Come

In my childhood days, I would watch the clouds fly by and the morning sun sparkling on the water, dancing on the water top with each little movement. When I would sit by the waterside, everything was peace and the dance would enthrall me. Simple times, simple mind, simple state. Bliss!

All our basic needs were met as children, food, clothing, a roof over our head, although we did move a lot. By the time I was 12, we had moved 12 times between 2 continents, so not much time to make lasting friendships. And not much time to feel at home. Home...funny thing that. Even at home, I never really felt at home.

When I think of it now, I am very grateful for my childhood and for my parents and brother and sister.
We had many things to be grateful for. We have many things to be grateful for.
When I see the news of hungry children dying in the streets, wars, homelessness, natural disasters...it all hits home again, how very grateful we should be when we can say we have our basic needs met.

As we watched the last 100...yes, even the last 50 years rush by and all the changes that have taken place, in science, medicine, technology....it is simply amazing, astounding. We have progressed so much and so fast...but have we?
And at what price?

Mother Nature is revolting and we still hide our heads in the sand. Even with proof that our evolving and our greed has caused climate change, floods, animal extinctions, we still say....it's not true....not our doing...not our responsibility.

Forests are being destroyed in the Amazon to make room for cash crops. People in Africa and Brazil have no clean drinking water because waste material is being dumped into the rivers and streams. But the bottled water industry is a billion dollar business per year.

The Arctic and Antarctic are melting...penguins and polar bears are dying because their habitat is being lost. However, it has opened up the seaway north of Canada so countries can put in their claim as to who has drilling rights for major oil deposits.

How long can Mother Earth keep on giving? How long can we rape and pillage before we pay the price..and yes, there is a price to pay.

Isn't it time that we be grateful instead of greedy? 
Isn't it time to make changes that will sustain us before we end up in a world such as Mad Max or Red Dawn? 
Isn't it time?
